Finding an English vitz manual is next to impossible.

These guys do have the manual but you will have to pay for it http://manualfox.com/manual18.htm

Also the vitz and the yaris are similar in most aspects, finding a yaris manual is the next best thing.

The Vitz itself is a Japanese model so the Vitz manual will be in English (unless someone has translated it). The equivalent global model (except for South East Asia) is the Yaris. You can find Yaris manuals on Toyota websites of multiple regions.  Somethings will be slightly different (because of regional differences in features, specs/configurations) but you get the idea.
